ROLE-PLAYING BRUNDTLAND HALL
The canteen challenge
How can collective catering be made more sustainable? What choices have the greatest impact on the environmental footprint of a canteen? And how can quality, costs, and environmental criteria be balanced in public tenders?
Participants will answer these questions through an engaging role-playing game that places them at the heart of the decision-making process for sustainable catering. Taking on the roles of public administrators, suppliers, nutritionists, activists, and end users, participants will tackle real challenges related to food procurement, waste reduction, and the adoption of environmental criteria in school and company canteens.
An immersive and educational experience to better understand the dynamics of sustainable collective catering and the importance of conscious choices for health, the environment, and the circular economy.
